Easy Homemade Apple Sauce

I love fall in Roswell, Georgia!  The days are warm, the nights are cool and there is so much to see a do.  Pumpkin patches, apple picking, corn mazes and hay rides.  These were all things on my daughters Fall Bucket List.  Lexi's Bucket List also included making apple sauce.  I love making apple sauce with fresh picked apples from Ellijay, but with 2 kids--one a toddler, the thought of picking apples…. Enter the Farmers Market!  Fresh apples AND I can make smaller batches, which means no canning!  Are you familiar with Hygee?  Am I the only one who has been living under a rock and totally missed this concept?  Recently DoTerra introduced their new products for 2021.  I was lucky enough to be able to purchase one of the kits containing all of the new products...  One of the items in there was an oil blend called Hygee—one that my entire family loves!  This word was completely new to me, so I did what most people do these days and searched Google.  And I was amazed.  Hygee is a Danish term or concept that cannot be translated into a single English word.  Instead it’s a word that encompasses a feeling of cozy contentment and wellbeing through enjoying the simple things in love.   As we enter into a new season, this word resonated with me.  It sparked some joy and curiosity.  This weekend saw the first cool crisp nights, the first chili of the season, and my youngest went pull-up free, and my oldest spent the wee...

  Tech neck is a new name for a condition that’s been around for years—neck pain that is caused by repetitive strain and injury to the muscles and other structures in the cervical spine.   Do you experience neck pain?   Headaches?   Jaw Pain? Happy Earth Day! 2020 is the 50th Anniversary of Earth Day and it's falling in the middle of some unusual times--where states and countries are on lockdown, where travel is restricted, and an unprecedented number of people are working from home.  With this we are witnessing first hand how changing our behaviors can have a profound impact on the Earth in a very short amount of time. This doesn't just hold true for the Earth, but for our bodies as well.   What we eat, drink, consume, put on our skin--these things all impact our bodies.  Drinking out of plastic can affect our hormones.  Eating poor quality, sugar filled food impact not just our weight but also HOW our bodies function.  On this Earth Day, I encourage you to look at your habits.  Consider ways that you can change your lifestyle to protect Mother Earth.  Recycle, Compost, Use reusable containers and bags, reduce your carbon foot print...  We only have 1 Earth... Mindset: The Missing Magic

We have set our goals, now what?   What can we do to make sure we are successful?   It’s been my experience that there is one thing that can make or break our goals:   Mindset.   When I think of mindset and goals, the first thing that comes to mind is the quote, “wether you think you can or you think you can’t, you’re probably right.”  Mindset, belief, faith—call it what you will but it is, what I like to call, the missing magic in goal setting,   There are also little things that we can do and say that have a huge impact on mindset.  First is the power of our words.  As Yoda says, “Do or do not, there is no try.”  Think about it, when you make a commitment to someone which is the one you’re actually going to do, the one when you say, “I will try and be there”. Thanksgiving and Pumpkin Pie

As many of you may know, I've been Gluten Free for several years.  To be honest, it has not always been easy—especially for an Italian girl who loves pasta!  However I also know that when I cheat and eat foods I’m not supposed to I get really sick and miserable.   A couple of years ago it was my turn to host Thanksgiving.  No easy task when your family includes a Vegan, a anaphylactic egg/dairy allergy, a soy allergy, and a gluten free child.  To be honest it was daunting—especially since I was used to cooking for 1 not 20!   I also LOVE Pumpkin Pie.  Its a tradition, a staple, a must have.  So I started a search for a Pumpkin Pie recipe that everyone could eat.   And I found one. Month of Thanks

Its November!  Where did the summer (and fall for that matter) go???   Imagine my surprise when I logged onto my account and realized that the last blog I posted was in May!  And I had no excuse as I'd written about Our Wedding, and never posted it. So today, I plan to rectify that. November--the Month of Thanks, and I have so much to be thankful for.  For starters, each and every one of you who take the time to read my posts.  I truly appreciate it.  I'm also thankful for my amazing family, Care More Chiropractic, my Chiro family, my health...  I could go on and on. When I got married last September I promised I'd share the pictures.  And, with it being the Month of Thanks, I figure this is the perfect opportunity to share them. So in honor of Thanks, I am sharing the post I forgot I wrote, and some of my favorite wedding pictures.  As for the album...  Soon!  I've almost unpacked and organized all of my crafting supplies....
